Mark Birchall Crowned Chef Award Winner at The Cateys 2025

We’re thrilled to announce that Mark has been honoured with the prestigious Chef Award at The Cateys 2025.

A Year of Triumph at Moor Hall

Mark’s win caps an extraordinary year: he led Moor Hall to earn its third Michelin star, making it only the tenth UK restaurant to achieve this milestone—and notably, he became the first Roux Scholar ever to win three stars for his own restaurant. Under his leadership, Moor Hall also holds a Green Michelin Star in recognition of its pioneering sustainability efforts—placing it at the forefront of ethical gourmet dining.

The judges lauded Mark as “an incredible chef” and “a true ambassador for our craft.” Their praise emphasised his dedication, innovation, and secure place at the pinnacle of his profession. They noted that his achievements inspire the next generation of chefs.

The Moor Hall Approach: Flavour Through Sustainability

From the kitchen garden to the table, sustainability is woven into every element of Moor Hall:

  • Ingredients are grown on-site in Moor Hall’s gardens, orchards, and greenhouses.
  • Produced not locally sourced are selected from trusted regional suppliers.
  • All food waste is minimized: root-to-stem and nose-to-tail cooking, composting, and water-harvesting help complete the circular cycle

Commitment Beyond Cuisine

Mark’s influence extends well beyond his menus. In 2024, he headlined the Hospitality Exchange in Belfast, delivering a keynote on sustainable success and bespoke hospitality. He’s also actively partnered with Sandy Park Café, offering work experience and support to students with special educational needs—reinforcing his belief in giving back to the community through food and training.
