We have selected some of the best British and Irish farmhouse cheeses to showcase in our Cheese Room. These are made by passionate individual farmers who still make cheese by hand from their own herds, using a blend of traditional and modern techniques. We then pick our cheeses according to the season to ensure that those we have on offer are of the freshest and highest quality throughout the year.
Just as we invite you into our gardens to discover more about the produce we grow, so there is also the opportunity to go behind the scenes to the cheese room to learn more and see first-hand how we look after them to get the best out of them.
While compiling the wine list, we looked for the simplest and humblest expression of a grape variety grown in a suitable climate under the clear guidance of the winemaker. AA Awards 2024 awarded our wine list ‘Best in England and overall’. Our wine philosophy is simple, we want it to be fun, interactive, enjoyable, and within reach of everyone. The sommelier team will be happy to talk through our wine pairings or assist you in finding the right wine for your occasion.
We have two options for wine pairings – The Prestige pairing, currently priced at £145, is based on the discovery of leading winemakers from both the old and new worlds. The Rarity pairing, currently priced at £295, is created around iconic winemakers and vintages.
We do also offer an alcohol-free pairing at £85. This consists of some of the world’s finest teas sourced for us by Jameel Lalani. Each tea is a single vintage, sourced from tea gardens in locations around the globe. Teas are treated like we would treat wine, working with terroirs, vintages, and appellations

Lancashire is a land of abundance. Our gardens teem with fruit and vegetables and flowers and herbs. In season here you might eat peas straight out of the pod, so fresh all they need is a touch of salt and nasturtium oil. What we don’t grow we seek out from the amazing produce tended and nurtured by local farmers and artisans.
On site we’re also busy with charcuterie, bread-making and our own micro-dairy. There’s always something interesting to explore or a discovery to be made. And we like to share what we find.
Join us in Mark Birchall’s Three Michelin Star restaurant for lunch. At lunchtime, we offer a choice of either a Four-Course Menu or our signature Provenance Menu. The Provenance Menu is available for reservations at 1:15pm and earlier on Fridays and Saturdays, and is served all day on Sundays.
